For this French dish, Wildflour chose cured duck's leg and cooked it in its own fat, maybe even with some port (Portuguese wine), resulting in a profoundly flavorful piece of meat, beautifully balanced by some boiled lentils and apple julienne in classic French remoulade sauce.

Rustichella Squid Ink Spaghetti. Php 450
Even without the famous squid ink pasta, the dish still impresses with its intensely flavorful and immensely delish symphony of chorizo pamplona, prawns, and pistachio. Seasoned just right for the palate, as evidenced in our failure to drizzle some lemon, but when we actually did, the result was an even lighter and fresher version that is both appealing and satiating at the same time.
Bucatini all' Amatriciana. Php 390
Wildflour recreates this classic dish from Amatrice in Rome with trademark ingredients such as tomato, chili, and cheese, with the guanciale (cured pork cheeks) at the heart of it all. Instead of pecorino romano, Wildflour used freshly grated parmesan, which may seem unorthodox to purists; but still vibrates sharply. The richness of the guanciale, in some inexplicable way, blends well with the tomatoes' tangy nature, and, with a bit of zing from the chili, Wildflour's version is truly an homage to Roman cooking at its best.
